These low-sodium and low-cholesterol meals deliver a delightful, unique flavor. Try these recipes for Smoky Pecan Peppercorn Chicken Pasta & Mint Julep Field Greens Salad
Smoky Pecan Peppercorn Chicken Pasta
INGREDIENTS 16 FROZEN Chicken Tender Strips ¼ Bottle Smoky Pecan Peppercorn Marinade ¼ C + 1 Tbsp. Olive Oil 1 Box Penne Pasta SAUCE INGREDIENTS 1 C Heavy Whipping Cream 1 Bottle Smoky Pecan Peppercorn Barbecue, Grilling & Cooking Sauce ½ C Asiago Cheese (grated) ½ C Parmesan Cheese (grated) ¼ Tsp Oregano ¼ Tsp Basil 1.5 oz (1 jigger) Premium KY Bourbon ½ 14 1/2 oz. Can Plain Petite Diced Tomatoes, DRAINED
DIRECTIONS SAUCE: Place 1 Tbsp olive oil in medium sauce pan, adding 1/2 can DRAINED plain petite diced tomatoes, cooking at medium heat for 5 min. Add remaining sauce ingredients (except bourbon), stirring often, until all cheese is melted and the sauce is smooth. Add bourbon just prior to serving. CHICKEN: Sauté FROZEN chicken in skillet or electric skillet, using the olive oil and marinade, cooking at medium heat, covered for 15-20 min, turning to thoroughly cook both sides (covering greatly reduces the cooking time for the frozen chicken). Uncover or partially cover during the last 5 min. of cooking time. PASTA: Cook Penne Pasta according to directions on the package, tossing with a splash of olive oil. To serve, place pasta on plates, topping with four sautéed chicken strips. Ladle pasta sauce over the top and serve. For a great additional treat, sprinkle with small pecan pieces and top off with fresh ground pepper. Serves four. Enjoy! Mint Julep Field Greens Salad INGREDIENTS SALAD 1 8 oz. package pre-washed, pre-cut field greens salad mix 2 oz. real bacon bits 1 Hard Boiled Egg, diced 4 Tbsp. Small pecan pieces Fresh ground pepper to taste SALAD DRESSING 4.5 oz. Mint Julep Gourmet Cooking Sauce 1.5 oz. Olive Oil (dressing is 3/4 sauce and 1/4 olive oil) DIRECTIONS Place field greens salad mix in large bowl, adding the egg, bacon and pecans. Combine sauce and olive oil in container with top that can be shaken. Shake well and pour over the salad. Toss to coat all salad with the dressing, adding fresh ground pepper over the top and it’s ready to serve. Serves four. Enjoy! VARIATIONS Ham - substitute ham for the bacon. Take thinly sliced deli ham and cut into small strips. Shrimp - substitute 1/2 C. small salad shrimp for the bacon.
